Production
The Tempranillo grapes are sourced from 30 year old bush vines planted in the Sierra Cantabria foothills, and along the lower course of the Najerilla river – where soils are part alluvial and part limesone-clay. They are hand-harvested into 200kg crates, and sorted by hand at the winery. After 3 days maceration at low temperature, the must undergoes temperature-controlled fermentation in cone-shaped stainless steel tanks with daily remontage and delestage. The wine is then aged for 18 months in 50% French and 50% American oak barriques (new and second year), followed by 2 years of bottle ageing.
Tasting notes
Pronounced black cherry, cedar and spice aromas. The palate is supple yet richly-flavoured with layers of dark plum, bramble fruit and cherry supported by well-integrated tannins. Toasty notes, black pepper and dried fruit characters on the finish.
